Water bending of the staves during manufacture (rather than bending over an open fire) results in significantly less tannin impact, allowing more primary fruit aromatics to shine, plus building mid palate texture and integrating earlier. Works particularly well with Marlborough Chardonnay, all Aromatics and Pinots, where there's already enough grape tannin.
