Our whisky barrels are sold in either 225L or 228L size with the same 2-3 years naturally air dried oak as we use for the wine industry. Our air drying process results in high vanilla flavors and removes harsh tannins and bitterness from the wood while adding additional structure. We toast and then char to levels 1-4.
Char level no. 2 is a Medium toast, & Char resulting in sweet and deep roasted notes, ideally suited to whisky.
